The holidays are fast approaching, which means a special kind of chaos, giving thanks, and days upon days of leftovers – in no particular order.
So here’s one of my favorite ways to bring new life to yourself AND the often overlooked mashed potato.
Even better if you have mashed SWEET potatoes to use for this beautifully comforting plate of Brown Butter Gnocchi.

Ingredients
- 1 egg
- 1 cup leftover mashed potatoes, regular or sweet
- 2 cups flour
- 1 stick of butter
- 1 tbsp fresh thyme, chopped
- Leftover turkey
- Leftover cranberry sauce
- Microgreens
- Salt
- Pepper
Instructions
Step 1
Bring a pot of salted water to an easy rolling boil.
Step 2
Warm your leftover mash in the microwave. It should only take about a minute.
Step 3
In a large mixing bowl, combine warmed mash with egg and flour until it forms a doughy ball.
Quarter the ball of dough and use your hands to roll each portion into a long doughy rope on a floured surface. You want each rope to be about as fat as your thumb.
Cut each rope into 1 inch pieces.
Step 4
Drop your little gnocchis into the boiling water. They’ll be ready to come out as soon as they float to the top, which should take about 2 to 3 minutes.
Set them aside.
Step 5
Meanwhile, reheat your turkey however you like.
Step 6
Over medium heat, melt a stick of butter in a saute pan.
Once melted, continue to gently heat the butter until it turns into a light toasty brown butter.
Add chopped thyme and cooked gnocchi to coat.
Season with salt and pepper as needed.
Step 7
Serve brown butter gnocchi topped with leftover turkey, cranberry sauce and micro greens (because they’re pretty).
