Were these originally supposed to be tiny little tarts? Well, yes.

But on this site we celebrate imperfection.

So when they came out of the oven flat as a cookie, we made a small change to the name.

Easy, and seriously addicting, don’t be surprised if you find yourself eating all of these tarts, err… cookies in one sitting.

Ingredients

  • green apples, peeled and diced
  • 5 tbsp sugar
  • 1.5 cups flour
  • 1/2 cup butter, softened
  • 2/3 cup brown sugar
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • egg
  • Splash of milk
  • Pie dough

Instructions

Step 1

Preheat oven to 425 degrees.

Step 2

Mix apples, sugar, 1.5 tbsp flour, lemon juice and cinnamon in a bowl.

Set aside.

Step 3

In a separate bowl, mix butter, 1 cup flour and brown sugar to create some big crumbly bits.

Set aside.

Step 4

Flour a hard surface and roll out your pie dough.

Cut dough into several 6(ish) inch circles. I like to do this by cutting around the outside of a bowl. 

Step 5

Place dough circles on a parchment lined sheet tray.

Place about 1/3 cup of apple filling in the middle and fold the sides of the dough up and around, leaving the top open.

Brush the top edges of the dough with egg wash (whisked egg and milk) and generously sprinkle the top with your sugary crumble.

Step 6

Bake for 15 to 20 minutes, or until golden.

Enjoy warm or cold, or with a big scoop of ice cream. Whee!
