Avocado Toast with Jammy Eggs & Chili Crisp
Lovingly called camp toast in our house, Avocado Toast has been a long-time staple when we’re at home or on the road - because there’s nothing quite like a good piece of bread that’s been buttered and griddled to perfection, then topped with a smear of creamy avocado and some of your favorite seasonings.
Bonus points if you have time to add a gorgeous runny egg.
It’s truly *chef’s kiss* amazing.
here’s what you’ll need
a loaf of crusty bread, sliced
plain guacamole
eggs
chives, chopped
red wine vinegar
butter
here’s what you’ll need to do
Bring a pot of water to a gentle boil.
Add a glug of red wine vinegar (we’re talking a tablespoon or two) to the water before dropping your eggs in.
Boil eggs for six minutes.
Immediately remove eggs from pot and submerge in a bowl of cold water to cool.
Once eggs are cool to the touch, gently crack the bottoms of the eggs and place them back in the cold water until you’re ready to peel.
Butter a slice of bread and place it on a griddle (or pan) over medium heat until golden and toasty.
Slather toast with plain guacamole.
Good To Know: We like to use the single serve guacamoles from Costco that are simply made from avocado and sea salt - not only are they predictably ripe and wonderful, but they’re also ready to use whether you’re at home or on-the-go.
Generously sprinkle guacamole with sea salt flakes.
Place peeled egg on top of your avocado toast.
Drizzle with chili crisp to taste.
Sprinkle with chives, and enjoy!
