Easy Homemade Pasta

Have a KitchenAid Mixer at home?

Then get yourself the pasta attachment so you can enjoy fresh pasta on the daily, because making homemade pasta is a lot easier than you think.

Don’t have a KitchenAid? 

Don’t worry!

My first pasta roller cost me about twenty bucks and I happily used it for close to a decade. 


here’s what you’ll need

  • 1.5 cups flour

  • 5 egg yolks 

  • 1 egg

  • 1 tbsp milk

  • 1 tbsp extra virgin olive oil

  • salt


here’s what you’ll need to do

Shake flour on the counter, making a small mountain. 
Make a well in the middle of your mountain.
Add egg, egg yolks, milk, olive oil and a good pinch of salt to the well. 

Now let’s get your hands dirty: Start mixing the dough until it’s no longer shaggy, but smooth.
Wrap dough in plastic wrap and refrigerate for at least 30 minutes.

Cut your dough ball in half so you can work in batches.
Lightly flour the dough and roll your first batch through the smooth rollers of your pasta roller at the smallest (but widest) setting (#1).
Fold dough in half and run it through the smallest setting again.
Fold dough in half again, this time running it through the next setting (#2) – twice.
Continue this cadence until you get to the largest (or skinniest) setting (#6).
At times it might seem like your dough is failing and falling apart – it probably isn’t, so just trust the process and continue on.
That being said, sometimes it does and that’s a bummer – but just pick your dough up and try again (this works great for yourself, too).

Now run that beautiful dough through the noodle slicing roller.
Toss your noodles with a bit of flour so they don’t stick together

Cook your pasta in boiling water that’s been salted like the sea.
It’ll only take a few minutes to cook.
Serve with your favorite sauce or some butter, cracked black pepper and parmesan cheese.
