Mini McGriddles
Looking for a fun and delicious breakfast to feed a group?
Look no further!
What we originally became obsessed with for camping food, is perfect for the holidays too.
Or any day, really.
Good to know: The recipe below makes six, but you can easily feed more by multiplying the ingredients.
Whee!
Big thanks to @theshayspence for showing us the way with this one.
here’s what you’ll need
6 eggs
6 maple syrup breakfast sausage patties
6 slices of American cheese
maple syrup
melted butter
salt
pepper
extra virgin olive oil
here’s what you’ll need to do
Preheat oven to 350 degrees.
Whisk eggs and season generously with salt and pepper.
Grease a jumbo muffin tin with cooking spray and evenly distribute egg mix.
Cook for about 10 minutes, or until eggs are set.
Meanwhile, cook maple syrup breakfast sausage patties in olive oil in a saute pan over medium heat until brown and cooked through.
Now it’s time to assemble!
Place a mini pancake, egg round, sausage patty, slice of American cheese and another mini pancake in little stacks on a sheet tray.
Brush with melted butter and a drizzle of maple syrup.
Pop in the oven for about 3 minutes, or until pancakes are warm and cheese is nice and melty.
Allow to cool before digging in, and enjoy!
