Olympic Muffins
Have you really been following the Olympics if you haven’t heard about the Chocolate Muffins that everyone’s raving about?
Big thanks to @jordan_the_stallion8 for finding the recipe so we can alllll enjoy Olympic Muffins while doing lunges in a tight fitting panty. 🏆
here’s what you’ll need
1/2 cup heavy cream
3/4 cup milk
1/2 cup butter
2 eggs
1/4 cup water
2 tsp instant coffee
1/2 cup cocoa powder
1 tbsp baking powder
2 cups flour
1/2 cup sugar
1/2 cup brown sugar
1 1/3 cup dark chocolate chunks
1 tsp vanilla
1/4 cup extra virgin olive oil
salt
here’s what you’ll need to do
Preheat oven to 375 degrees.
Put milk, water, and instant coffee in a small sauce pan and bring to a simmer over medium heat.
Add cocoa powder, 1/2 cup chocolate chunks and butter. Continue to simmer everything until melted, whisking to incorporate.
Set aside to cool slightly.
Pour cooled chocolate mix into a large bowl.
Add sugar, brown sugar, extra virgin olive oil, eggs, and vanilla. Whisk to incorporate.
In a separate bowl, mix flour, baking powder and 1/4 tsp salt.
Slowly fold flour mix into the chocolate mix in stages, making sure not to over mix.
Fold in another 1/3 cup chocolate chunks.
Line a jumbo muffin tin, and fill each cup 3/4 of the way full with mix.
Sprinkle the top of each cup of muffin mix with a few more chocolate chunks, and bake for about 20 minutes (or until a toothpick comes out clean).
Meanwhile, make the chocolate ganache that you’ll pipe into the center of your muffin by melting heavy cream, 1/3 cup chocolate chunks and a pinch of salt together. Stir occasionally until thick and unctuous, and set aside to cool.
Remove muffins from the oven and allow to cool slightly before piping melted chocolate into the middle. The chocolate ganache will probably come out fast and create quite the mess when you’re piping it, but will continue to set while everything cools completely and be sooooo delicious.
You can also skip the chocolate ganache in the middle, but would it really be an Olympic Muffin if you didn’t go BIG?
Oh, and I like to enjoy these warmed up with a little pat of melted butter, too.
