With warmer temps comes lighter eating, which means we find ourselves crunching on a lot of lettuce leaves.

But that doesn’t mean it has to taste ‘healthy’ or ‘boring’.

On the contrary, this Fried Goat Cheese and Strawberry Salad is anything but with pops of fresh herbs, sweetness of strawberry, the creamy yet crunchy deliciousness of sweet and spicy fried cheese and crisp asparagus shavings.

A definite must try, if you ask me.

Ingredients

  • 1/2 cup goat cheese, plain
  • 1/2 cup flour
  • 1/2 cup panko bread crumbs
  • 2 eggs, whisked 
  • 1 tbsp honey
  • 1/2 tsp cayenne pepper
  • A package of chicken tendies
  • Balsamic dressing
  • Canola oil
  • Salt
  • Pepper

Instructions

Step 1

Put your goat cheese in a bowl.

Add honey, cayenne, 2 tbsp chives and a pinch of salt and pepper, stir to incorporate.

Plop that blob onto a piece of parchment paper and roll it tight light a… burrito.

Put it in the freezer for about 30 minutes.

Step 2

Heat a pan over medium to medium-high heat.

Season your chicken tenders with salt and pepper before adding them to the pan with enough water to partially submerge the chicken.

Cover and simmer until cooked through and shreddable. This should take about 15 to 20 minutes.

Set shredded chicken to the side to cool before mixing with enough pesto to coat.

Step 3

Remove goat cheese from the freezer and cut into half inch thick rounds.

Coat each cheese round in flour, then egg, then panko and set aside.

Step 4

Over medium heat, CAREFULLY heat a quarter inch of oil in a heavy, deep-sided pan until it reaches about 325 degrees.

CAREFULLY place your goat cheese rounds in the HOT oil using tongs, being very careful not to splash.

Cook until golden and delicious on one side, and then CAREFULLY turn them over (using tongs) to do the same on the other side. This whole process should only take a couple minutes.

Using tongs, remove cheese from oil and place on a paper towel-lined plate to cool.

Step 5

Now it’s time to assemble your salad.

Toss greens with chopped asparagus.

Add a healthy portion of shredded pesto chicken to one side.

Place goat cheese rounds on another side.

Sprinkle the entire salad with strawberries and chives.

Top with shaved asparagus.

Drizzle with a balsamic vinaigrette.
