Not a fan of spice, go ahead and turn down the heat with a little less red pepper flake. 

And don’t forget to serve this beauty alongside a nice loaf of crusty bread.

  • 1 lb Italian sausage
  • Cheese tortellini
  • onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp flour
  • 4 cups chicken stock
  • 1 tbsp Italian seasoning
  • 1 tbsp red pepper flake
  • 1 cup whole milk
  • 2 cups baby spinach
  • 1/4 cup butter
  • Sharp white cheddar, grated
  • Extra virgin olive oil
  • Salt
  • Pepper


Step 1

Cook tortellini according to package directions.

Set aside.

Step 2

Over medium heat, brown sausage in a drizzle of extra virgin olive oil.

Remove from the pan and set aside once the sausage is cooked through.

Step 3

In the same pan, melt butter and saute onion and garlic until soft and translucent.

Step 4

Sprinkle flour into the pan and quickly stir to create a roux.

Step 5

Slowly whisk stock into the pan, and continue whisking until it’s lump-free.

Add Italian seasoning, red pepper flake, salt, pepper and milk.

Simmer until warmed through.

Step 6

Return sausage to the pan, along with greens.

Gently stir until greens are wilted.

Add cooked tortellini.

Step 7

Serve garnished with grated Sharp White Cheddar Cheese.
