Ingredients
- Carrots
- 5 tbsp butter
- 1 tbsp maple syrup
- 1 tsp Garam Masala
- 1 cup Greek yogurt
- Pine nuts
- Cilantro
- Extra virgin olive oil
- Salt
- Pepper
Instructions
Step 1
Bring a large pot of water to a boil.
Step 2
Peel carrots and blanche (boil) for about 5 minutes, or until tender.
Step 3
Gently toast pine nuts in a pan over medium-low heat until golden.
Be careful not to burn them as this will happen fast.
Like, way faster than you think.
Set aside.
Step 4
Melt butter in a saute pan over medium-low heat.
Add maple syrup, Garam Masala and a healthy pinch of salt.
Place carrots in your unctuous butter mix and coat for 5 minutes or so.
Step 5
In a separate bowl, mix yogurt with 1 tbsp of extra virgin olive, salt and pepper.
Step 6
Smear yogurt on a plate.
Top with glazed carrots.
Garnish with fresh cracked salt and pepper, toasted pine nuts and cilantro leaves.
