Chicken Pesto Spaghetti Squash

  • A baguette, sliced diagonally
  • 4 tbsp butter 
  • 1 tbsp extra virgin olive oil
  • A shallot, chopped
  • 1/2 cup chives, thinly sliced
  • 4 cups assorted mushrooms, sliced, diced and chopped
  • 1 cup heavy cream
  • 1/2 cup sharp white cheddar, shaved
  • Salt
  • Pepper


Step 1

Preheat your oven to 350 degrees.

Step 2

Butter your baguette slices and pop them in the oven for about 15 minutes, or until they’re golden and delicious.

Set aside.

Step 3

Saute your shallot over medium heat in 3 tablespoons of butter.

Add your mushrooms. Give them a hit of salt and pepper and a glug of olive oil. Cook until softened and the mushroom liquid has mostly disappeared.

Add your cream and reduce until thickened.

Taste for seasoning. Add another pinch of salt and pepper if needed.

Throw in your chives.

Step 4

Top bread with this crazy delicious mushroom mix.

Garnish with shaved cheese.
