Sheet Tray Gnocchi can be made pretty much any way you like, but today we’re making it with a load of savory mushrooms, greens, goat cheese and dijon mustard.

Chicken Pesto Spaghetti Squash

  • A box of pre-made gnocchi
  • 4 cups assorted mushrooms, sliced, diced and chopped
  • A shallot, thinly sliced
  •  3 cups assorted greens
  • 1 little log of goat cheese
  • 1 tsp Italian seasoning
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 4 tbsp butter, melted
  • Extra virgin olive oil
  • Salt
  • Pepper


Step 1

Preheat your oven to 425 degrees.

Step 2

Place your mushrooms, gnocchi and shallot on a sheet tray.

Generously sprinkle with salt, pepper and Italian seasoning.

Drizzle with olive oil.

Toss to coat.

Step 3

Roast in the oven for about 15 minutes.

Step 4

Meanwhile, mix your butter, mustard and honey in a separate bowl.

Step 5

Remove tray from oven and toss before adding your greens and drizzling with your honey mustard butter sauce.

Toss to coat.

Add little blobs of goat cheese all over the tray.

Pop back in the oven for 5 minutes.

Step 6

Give ‘er a stir and enjoy!
