You guys have to try this ooey, gooey, cheesy treat inspired by Diane Morrisey’s Tomato Confit over Goat Cheese.
Oh, and guess what – Costco currently has TWO 10 oz logs of goat cheese for only $6.99. That price is so freaking good that I had to watch them ring it up to actually believe it.

Ingredients
- A log goat cheese
- 2 cups cherry tomatoes
- 1 cup kalamata olives, pitted
- A handful garlic cloves
- A few sprigs rosemary
- Salt
- Pepper
- Extra virgin olive oil
- Crusty bread
- Butter
- Balsamic reduction, optional


Instructions
Step 1
Preheat your oven to 450 degrees.
Step 2
Pop your tomatoes, olives and garlic into your favorite baking dish.
Sprinkle with salt, pepper and a hefty drizzle of olive oil.
Add your sprigs of rosemary, give it all a nice toss to incorporate.
Step 3
Roast in the oven for 20 to 25 minutes, or until your tomatoes are nice and soft.
Step 4
Meanwhile, thinly slice your crusty bread.
Slather it with butter and pop it in the oven to get golden and delicious. This should only take about 4 or 5 minutes.
Step 5
Crumble your goat cheese into large pieces on a serving platter.
Sprinkle with fresh ground salt and pepper.
Step 6
Spoon your lovely baked olive, garlic and tomato relish over the top.
Drizzle with olive oil and a balsamic reduction.
Generously spread it across your bread and enjoy.
