I recently saw @consciouskitchenstories deep fry an egg yolk, and I knew I had to give it a try.

While this version of avocado toast requires a bit more planning, I assure you the crispness of the yolk with the surprise softness inside is SO worth it.

Pair that with the freshness of spring peas and a hint of mint, and you’ve got yourself one heckuva neat breakfast, lunch or dinner to try.

Ingredients

  • Crusty bread, sliced thin 
  • Avocado
  • 1/2 cup frozen peas
  • 2 limes, juiced
  • 2 tbsp fresh mint
  • 1 egg yolk per person
  • 1 egg, whisked
  • 1 cup flour
  • 1 cup Panko bread crumbs
  • Butter
  • Canola oil
  • Microgreens
  • Salt
  • Pepper
  • Cayenne pepper, optional

Instructions

Step 1

Separate your egg yolks, placing them on a parchment-lined tray and pop them in the freezer for about an hour.

Step 2

Meanwhile, blitz your avocado, spring peas (thawed), mint, lime juice and a healthy pinch of salt and pepper in a food processor until smooth.

I also add a pinch of cayenne pepper for some kick, but that’s optional for you.

Step 3

Slather your slice of bread with butter and toast it in a saute pan over medium-low heat until golden.

Set aside.

Step 4

Over medium heat, CAREFULLY heat a couple inches of oil in a heavy, deep-sided pot (like a Dutch Oven) until it reaches about 350 degrees.

Step 5

Meanwhile, take your egg yolks out of the freezer so we can rock that three-step breading process.

GENTLY place an egg yolk in a bowl of heavily seasoned flour and fully coat it.

Now GENTLY place the egg yolk in a bowl of whisked egg and fully coat it.

Finally, GENTLY place your egg yolk in a bowl of heavily seasoned bread crumbs and fully coat it.

But wait, there’s more…

We’re going to pop that yolk back into the whisked egg and then the bread crumbs to give it a nice thick coat of breading.

Not sure what ‘heavily seasoned’ means? Infuse that mix with a healthy dose of salt and pepper. Voila! Seasoned, heavily. Hopefully.

Step 6

CAREFULLY slide your breaded egg yolk into the oil using a metal spatula and give it a gentle fry for about 15 seconds on each side until nice and golden.

Try not to cook the yolks for too long or you won’t get the ooey gooey center we’re looking for.

CAREFULLY remove your yolks with a spatula and place on a paper towel-lined plate. Season with salt and set aside.

Step 7

Lay your toasted bread on a plate and pipe your beautiful spring pea avocado mix on top.

Don’t have a piping bag? Don’t stress. Just slather it on with a spoon.

Give that a sprinkling of salt.

Place your crispy egg yolk on top.

Garnish with something pretty and fresh like sliced green onion or micro greens (if you can find them in your area).

Step 8

Enjoy with a hot cup of coffee and a small side salad or bit of fruit.

YUMM-Y.

Pro Tip: Freeze a couple extra egg yolks in case any of them break while breading.

Pro Tip Deux: Don’t leave your egg yolks in the freezer longer than an hour.
Speaking from experience, they get weird.
Not only that, but it would be super dangerous to pop an ice cube into hot oil.
