When your daughter sends you a recipe to make, you make it – and maaaaaaan, am I glad I did.

This creamy Whipped Feta with Roasted Balsamic Strawberries by @joyfullyfittransformations is a dish that dreams are made of.

Planning to give it just a ‘taste’, we found ourselves standing over the plate inhaling the whole thing, allowing only the sounds of ooh, ahh and yum to escape our mouths.

  • 1 container of strawberries, stemmed and quartered
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 cup feta, crumbled
  • 1 cup plain greek yogurt
  • 1/4 cup extra virgin olive oil
  • 1/2 cup basil, chiffonade
  • 1 tsp Italian seasoning
  • Fresh ground pepper
  • Toast


Step 1

Preheat your oven to 350 degrees.

Step 2

Mix balsamic vinegar with 1 tbsp honey and drizzle over strawberries on a baking sheet (or dish).

Stir to incorporate before popping in the oven to roast for 30 minutes.

Step 3

Meanwhile, blend your yogurt, feta, olive oil, Italian seasoning and a pinch of black pepper until whipped and creamy.

Step 4

Smear your whipped cheese lovingly on a plate.

Drizzle with honey.

Top with roasted strawberries.

Garnish with basil and fresh ground pepper.

Step 5

Serve warm with tiny little buttery toasts.
