Crispy Feta Fried Eggs

We’ve all seen the viral Crispy Feta Fried Eggs, but I’m here to tell you it actually WILL change your life.

And while I’d love to credit the original owner of this recipe, I’ve seen so many versions that I just don’t know where it all started.

Which is a good reminder that there are SO MANY ways to make this recipe.

Leave out the chili crisp.
Serve it with toast.
In a tortilla.
Or over rice.

Hate pesto? Don’t add it.

here’s what you’ll need

  • feta cheese crumbles

  • chili crisp

  • eggs

  • salt

  • pepper

  • pesto

  • fried potatoes

  • sriracha

  • microgreens


here’s what you’ll need to do

Over medium heat, sprinkle crumbled feta cheese all around the edge of a small saute pan.
Plop a healthy heap of chili crisp in the center and then crack an egg over the whole thing. 

Lid it and cook until your egg white is set, but your yolk is still runny.

If your cheese is getting too crisp (is there even such a thing?), then go ahead and turn your heat down a bit. 

We served ours over leftover fried potatoes smothered in pesto, topped with a hit of Sriracha and spicy micro greens.
