Cucumber Salad

My nod to @logansfewd - because sometimes you need to eat a whole cucumber - and this is how I like mine.

Sauce inspiration comes from the Grilled Cucumber Salad by All Things Barbecue.


here’s what you’ll need

  • English cucumber, thinly sliced

  • shallot, thinly sliced

  • radishes, thinly sliced

  • chives, chopped

  • 2 tbsp Bachan’s Original Japanese Barbecue Sauce

  • 1 tbsp chili crisp

  • 1 tbsp rice wine vinegar

  • 1 tbsp white miso paste

  • Everything But The Bagel seasoning


here’s what you’ll need to do

Using a mandoline slicer, thinly and CAREFULLY slice your cucumber, shallot and radishes. 
Put them in a food storage container (that has a lid). 

Top with a handful of chopped chives.
Add Bachan’s, chili crisp, rice wine vinegar and white miso paste to the container. 
Generously sprinkle with Everything But The Bagel seasoning.

Add lid, making sure it’s sealed tightly, then shake shake shake

Remove lid and enjoy! 

Good To Know: This salad is best served immediately.
