Gnocchi alla Vodka & Burrata in a Pizza Bowl
We recently bought a gift certificate for someone we love to a restaurant that’s out-of-state - simply because I saw a dish like this on their menu.
Lol.
So while I’ve never been to Osteria Amore - and it’s looking like they’ll probably never get to go either - their pizza bowl inspired the heck out of me, and I hope it inspires you, too.
Oh, and the gnocchi inspo for this recipe came from @thenaughtyfork - minus the vodka, of course.
Whee!
here’s what you’ll need
gnocchi
pizza dough, we like to use the DeLallo mix
1/2 onion, diced
1 shallot, diced
2 cloves garlic, minced
chives, chopped
basil
6 oz can tomato paste
1/2 cup heavy cream
1/2 cup mozzarella cheese, shredded
burrata
butter
extra virgin olive oil
flour
red pepper flake
salt
pepper
here’s what you’ll need to do
Preheat oven to 450 degrees.
Cook gnocchi according to package directions, reserve pasta water, and set aside.
Flour your pizza dough, and poke, knead and stretch until it’s your desired size.
Place a small oven-proof bowl face down on a parchment-lined sheet tray and lightly oil the outside of the bowl. Now lay your pizza dough on the outside of the bowl, making sure there are no holes or thin spots.
Bake in preheated oven for about 15 minutes, or until it’s cooked through and golden in color.
Remove pizza bowls from oven and set aside to cool.
Pro Tip: Make sure you have enough room in the oven for the dough to expand as it cooks, because it will.
Meanwhile, melt 3 tbsp butter in a pan over medium heat.
Add onion, shallot, and garlic. Season with salt and pepper, and saute until soft and translucent.
Add tomato paste and a hefty pinch of red pepper flake.
Stir until fragrant (just a couple minutes) and add heavy cream and 1/2 cup pasta water.
Simmer until warmed through and add mozzarella cheese.
Stir to incorporate, adding more pasta water, if needed.
Toss gnocchi in the sauce.
Brush the edges of your pizza bowl with melted butter.
Spoon cheesy gnocchi into the pizza bowl and top with a big ball of burrata.
Sprinkle with Maldon salt flakes, fresh cracked pepper, chopped chives and basil leaves.
And enjoy!
Just please be careful not to choke on that cheese pull because WOWEE.
