Ham, Egg & Cheese Muffin Cups
Breakfast doesn’t get any easier than these Ham, Egg & Cheese toasty things that all come together in a giant muffin tin.
So, we’ll call it a… umm, muffin cup?
Sure.

here’s what you’ll need
sliced bread
butter
ham, thinly sliced
pesto
red onion, thinly sliced
eggs
melty cheese, shredded
salt
pepper
hot sauce
pea shoots
here’s what you’ll need to do
Preheat oven to 375 degrees.
Butter one side of the bread and place it butter-side down in a jumbo muffin tin.
Add a couple slices of ham to each bread cup.
Then add pesto and red onion.
Crack an egg into each cup.
Season generously with salt and pepper.
Sprinkle with cheese.
Pop in the oven for about 20 minutes, or until eggs are cooked through (to your liking).
Let cool long enough that they don’t melt your face when you take a bite.
Douse with hot sauce.
Top with pea shoots, herbs or something else that’s green.
