Lamb Kofta
I recently asked the internet if there was a word for when you crave something you’ve never had before, and apparently there isn’t - which seems VERY strange to me.
But that’s okay, because I was also able to ask what it was called when you wrap ground lamb around a skewer, since that’s what I was craving.
Turns out it’s called Lamb Kofta, and I am SO HAPPY I went down a rabbit hole of research to learn how to make these.

Omit the sticks and form your lamb into mini hot dog shapes for cooking.
here’s what you’ll need
1 lb ground lamb
1/2 onion, grated
2 cloves garlic, minced
1/4 cup parsley, chopped
1 tsp cumin
1 tsp coriander
1 tsp paprika
1/2 tsp cinnamon
extra virgin olive oil
salt
pepper
here’s what you’ll need to do
Soak wooden skewers in water for at least 30 minutes so they don’t burn while cooking.
Meanwhile, mix lamb, onion, garlic, parsley, cumin, coriander, paprika, cinnamon and a pinch of salt and pepper in a bowl.
Securely mold lamb mix around the end of each of your skewers until you have a bunch of little hot dog-like shapes.
Refrigerate skewers for 30 minutes so they’ll keep their shape while cooking.
Heat a drizzle of olive oil in a pan over medium high heat and sear your skewers 4 to 5 minutes per side, or until lamb is cooked through.
Allow to cool for a few minutes before serving with tzatziki for dipping, as well as your favorite freshies, like cucumber, tomatoes, red onions, kalamata olives and greens.
