Garam Masala Apple Crisps

We came home from a month of travel to pounds of apples that my in-laws picked for us from their trees on the Missouri - and if you’ve ever slowly driven a dirt road, lazily waving at everyone you see, walked through dewy knee deep grasses to stand on the edge of the river and watch fish jump through iridescent ripples, then you know these apples were the little rays of sunshine we so desperately needed.

Pair them with warming spices like cinnamon, clove, black pepper and nutmeg, and you have yourself a dish that’s the perfect nod to summer while ALSO honoring the new season. 

Oh, and technically these are crumbles because we didn’t use any oats in the topping, but that was done intentionally.

Crisps just sounds prettier to me. 


here’s what you’ll need

  • 2 cups of apples, peeled, cored and sliced

  • 1/4 cup sugar

  • 1/2 cup + 1 tbsp flour

  • 3/4 tsp cinnamon

  • 1/2 tsp Garam Masala

  • 1/4 cup brown sugar

  • 1/2 tsp baking powder

  • 1/4 cup cubed cold butter

  • salt


here’s what you’ll need to do

Preheat your oven to 375 degrees.

Sprinkle apple slices with 1/4 cup sugar, 1 tbsp flour, 1/2 tsp cinnamon, 1/4 tsp Garam Masala and a pinch of salt.
Mix until incorporated and place in oven-proof ramekins until they’re about 3/4 of the way full.

Now make your topping by putting 1/2 cup flour, 1/4 cup brown sugar, 1/2 tsp baking powder, 1/4 tsp cinnamon, 1/4 tsp Garam Masala, a pinch of salt and 1/4 cup COLD cubed butter in a bowl. 
Gently mix with your fingers until crumbly and generously sprinkle on top of your apple filling.

Place oven-proof ramekins on a sheet tray and bake for 20 to 25 minutes until golden and crisp.

Allow to cool slightly before adding a scoop of vanilla ice cream and digging in to enjoy.

Important: I can’t stress that whole ‘allow to cool’ thing enough.
These gorgeous apples will be molten and bubbly when they come out of the oven and we don’t want anyone melting their faces off.
