Mini Pumpkin Spice Croissants

Does the fact that I turned our Mini Chocolate Croissant recipe into a pumpkin spice one make me a basic betch?

Well, yes. 

But I think we all knew that was the case anyway.


here’s what you’ll need

  • puff pastry

  • 1/2 cup pumpkin puree

  • 1/4 cup brown sugar

  • 1 tsp pumpkin pie spice

  • 1/2 tsp vanilla extract

  • 1 egg

  • powdered sugar


here’s what you’ll need to do

Preheat oven to 400 degrees.

Mix pumpkin puree, brown sugar, pumpkin pie spice and vanilla in a bowl.

Roll out a sheet of puff pastry.
Cut into small triangles.
Add a bit of pumpkin spice mix to the larger side of the triangle (trying not to overfill) and roll into tiny little croissants.
Pop on a sheet tray and lightly brush the tops with egg wash.

Cook for 10 to 12 minutes, or until golden and delicious.

Dust with powdered sugar.
