Miso Salmon with a Strawberry Citrus Salad

This Miso Salmon with a Strawberry Citrus Salad takes less than 30 minutes and is PACKED with protein, flavor and zest.


here’s what you’ll need

  • salmon filet(s)

  • 1 grapefruit, peeled and sliced thin

  • 1 orange, peeled and sliced thin

  • strawberries, quartered

  • 1 jalapeno, thinly sliced

  • 1 avocado, sliced

  • 1/2 red onion, thinly sliced

  • mixed greens

  • pea shoots

  • crumbled feta

  • chives, chopped

  • 1 can chickpeas

  • 2 tbsp white miso

  • 1 stick butter, softened

  • extra virgin olive oil

  • Maldon sea salt flakes

  • salt

  • pepper

  • paprika


here’s what you’ll need to do

Preheat oven to 400 degrees.

Drain, rinse and pat dry a can of chickpeas before placing them on a sheet tray and drizzling with extra virgin olive oil. Sprinkle generously with salt, pepper and paprika.
Bake in the oven for 20 minutes, or until nice and crispy.
Set aside to cool.

Mix miso and a handful of chopped chives into a stick of softened butter.
Lay salmon filet(s) on a parchment-lined sheet tray and slather with this magic butter mix.

Pop in the oven and roast for about 15 minutes, or until fish is cooked through and flaky.

Good To Know: Cooking times may vary dramatically depending on the thickness of your fish, so check on it every 5 minutes or so.

Place mixed greens on a platter with crispy chickpeas, colorful slices of orange and grapefruit, quartered strawberries, thinly sliced jalapeño and red onion, hunks of avocado and crumbled feta cheese.

Sprinkle the whole thing with flakes of Maldon sea salt and fresh cracked pepper.

Add salmon to the platter, topping it with a handful of pea shoots for extra freshness and texture.
