(Not My) Mom’s Banana Bread
So you’re saying the islands are calling and a loaf of banana bread can whisk me away there?
Heck yes!
At least this one can.
Famously known on the North Shore of Oahu as Mom’s Banana Bread, we don’t drive past Seven Brothers without stopping for a slice (and loading up on my favorite socks).
Toooootally random, I know.
While you’re at it, sit down and enjoy one of their larger than life (or most people’s head) Cowboy Burgers.

Oh, wait. I forgot we were dreaming.
But if we weren’t, that would be the perfect way to spend a day on the North Shore of Oahu.
I mean, obviously you’d have a little stroll through the town of Haleiwa, too.
Until then, here’s how to make the incredible banana bread.
here’s what you’ll need
3 ripe bananas, mashed
2 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup buttermilk
I cup dark chocolate chunks
2/3 cup coconut flakes
1 cup powdered sugar
3 tbsp milk
here’s what you’ll need to do
Preheat oven to 350 degrees.
Peel bananas and mash them in a bowl.
Set aside.
In a separate bowl, whisk together flour, baking soda and salt.
Set aside.
In a large bowl, mix softened butter and sugar until light, fluffy and creamy.
Add eggs to the mix (one at a time) while continuing to whisk.
Now add vanilla and mashed bananas.
Time to add your dry ingredients and the buttermilk, a little bit at a time, until combined.
Be careful not to over mix.
Pour batter into a greased loaf pan and sprinkle with 1/3 cup coconut flakes and 2/3 cup dark chocolate chunks.
Fold chocolate and coconut into the batter and then spread evenly.
Sprinkle the top of the batter with remaining dark chocolate chunks and coconut flakes.
Bake for 60-75 minutes, or until a toothpick inserted into the center comes out clean.
Allow banana bread to cool in pan for about 10 minutes before moving to a wire rack to cool completely.
Meanwhile, make your glaze by mixing powdered sugar and milk.
Drizzle bread with glaze and allow to cool for a couple more minutes before digging in.
