Seared Scallops with a Lemon Radler Beurre Blanc

here’s what you’ll need

  • scallops, colossal

  • grapefruit, segmented

  • strawberries, quartered

  • jalapeños, thinly sliced

  • chives, chopped

  • pea shoots

  • 1/2 cup Athletic Brewing Ripe Pursuit Lemon Radler

  • 1/2 cup butter, chilled and cubed

  • extra virgin olive oil

  • salt

  • pepper


here’s what you’ll need to do

Remove the muscle flap from the side of your scallops and gently pat dry with paper towel.
Season both sides of the scallop with salt and pepper.

Drizzle olive oil in a saute pan over medium-high heat.
Sear scallops on the first side for 2 minutes until golden and browned.
Flip and sear the other side for 1 to 2 minutes.
Remove scallops from the pan and set aside.

PRO TIP: Scallops are done cooking when all edges are opaque and they’re slightly firm to the touch, but have a little bounce back (like jell-o).

Try not to overcook your scallops or they’ll be tough and rubbery.

Remove pan from heat.
Slowly and CAREFULLY add beer.
Put your pan back on the burner and simmer until beer is reduced by half.

Reduce heat to low and whisk in chilled butter, one cube at a time, until the sauce is smooth and emulsified.
Season with salt and pepper to taste.

Arrange scallops on a bed of pea shoots surrounded by grapefruit, strawberries and jalapeño slices.
Drizzle with sauce.
Garnish with chives, and enjoy!
