Peach Pie Flying Saucers

But let’s be honest, I don’t actually really even know what that means - not to mention I initially grilled these peaches for a salad, but then remembered I like my salads crisp - so I took the peaches just a little bit further, mixed them with some cinnamon, butter and sugar and Toas-Tite to the rescue for some Peach Pie Flying Saucers.
Woo hoo!
here’s what you’ll need
peaches
white bread
1/4 cup sugar
1 tsp brown sugar
1 tbsp cinnamon
butter
here’s what you’ll need to do
Preheat grill to medium.
Pit and slice each half of your peach into quarters.
Grill cut side down for 2 to 3 minutes, or until nice grill marks form.
Flip peaches and do the same on the other side.
Remove peaches and set aside to cool.
Butter a slice of bread and place it (buttered-side down) on one half of your Toas-Tite griddle.
Pro Tip: If your slice of bread isn’t large enough to cover the Toas-Tite griddle, use a rolling pin to roll the bread out and make it slightly larger.
Cube grilled peaches and throw in a bowl with 1 tbsp butter, brown sugar, and a pinch of cinnamon.
Stir to incorporate and add to the center of your bread, leaving about a half inch border around it.
Top filling with a second slice of buttered bread (buttered-side up).
Close the Toas-Tite griddle, ensuring the sandwich is centered and the edges of the griddle are sealed properly.
Remove any excess bread that may be sticking out of the Toas-Tite griddle.
Place the closed Toas-Tite on your campfire or grill.
Cook for a couple of minutes on each side, or until the bread is golden and toasted.
CAREFULLY open the Toas-Tite (it will be HOT), and use a spatula to help remove the sandwich.
Sprinkle the top of your sandwich with a cinnamon sugar mix (the ultimate cinnamon sugar ratio is 1 tbsp cinnamon to 1/4 cup sugar), and allow to cool for a couple minutes (the inside of your sandwich will also be HOTTT) before cutting in half to enjoy!
