Salted Caramel Macadamia Nut Popcorn
Forget the milk and cookies, leave Ono Pop out for Santa instead.
Inspired by the Salted Caramel MacNut Popcorn we became OBSESSED with from the Kailua Farmer’s Market on Oahu (every Thursday), this salty, sweet snack will have you looking for ways to ‘manage’ your cravings.
Like, set a timer for your next bit.
Hide it in the cabinet.
Ask your husband to stash it.

Until then, here’s how you can ‘attempt’ to make their incredible Salted Caramel MacNut Popcorn at home - though I promise it won’t be nearly as good as the real thing.
here’s what you’ll need
12 cups popped popcorn
1 cup macadamia nuts, chopped
1 cup salted butter
2 cup brown sugar
1/2 cup light corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla extract
here’s what you’ll need to do
Place popped popcorn in a heatproof bowl, removing any un-popped kernels.
Add chopped macadamia nuts and toss to incorporate.
In a small saucepan over medium heat, melt butter.
Stir in brown sugar, light corn syrup and a tsp of salt.
CAREFULLY bring to a simmer (this stuff is like sticky magma), stirring constantly for 4 or 5 minutes, or until it reaches a temp of about 235 degrees.
Remove pan from heat and CAREFULLY add baking soda and vanilla extract.
THE MIXTURE WILL PROBABLY BUBBLE UP SO BE VERY CAUTIOUS IN DOING THIS.
Again, DANGER. HOT. STICKY. BE CAREFUL. Pah-lease.
Pour caramel sauce over popcorn mix and use a rubber spatula to gently fold the caramel and popcorn together until fully coated.
Spread caramel corn on a parchment lined baking sheet and allow to cool and harden.
Sprinkle very generously with sea salt flakes.
