Viral Baked Feta Spaghetti Squash
Have you ever stopped and thought: I don’t think I’ve had a veggie in several weeks?
Yeah, me either.
But if I did, I’d run my happy little hiney to the grocery store, grab a spaghetti squash and pair it with this old school viral baked feta recipe.
here’s what you’ll need
spaghetti squash
a block of feta
1.5 c cherry tomatoes
2 c baby spinach
1/2 c kalamata olives
4 cloves garlic, minced
green onions, thinly sliced
1 tsp red pepper flake
1 tsp Italian seasoning
Sriracha
extra virgin olive oil
salt
pepper
here’s what you’ll need to do
Preheat oven to 350 degrees.
CAREFULLY poke 8 to 10 slits through the skin of a spaghetti squash to vent before popping it in the microwave to cook for about 4 minutes. After 4 minutes, turn it over and cook for another 4 minutes.
Carefully squeeze your squash to see if it has a little give, but be careful because this thing will be HOT.
If not, microwave for another 2 to 4 minutes or until it feels a bit tender from the outside.
Carefully remove your squash from the microwave and let it cool. Again, this thing will be HOT.
Meanwhile, place a block of feta in the middle of a baking dish.
Add cherry tomatoes, kalamata olives and garlic to the baking dish.
Season feta with red pepper flakes and Italian seasoning.
Generously drizzle everything with extra virgin olive oil and season with salt and pepper.
Bake feta in the oven for about 20 minutes, or until tomatoes burst and feta turns golden and begins to melt.
Once your squash is cool enough to handle, cut it lengthwise and scoop the seeds from the center - those go in the garbage. Use a couple forks to shred the squash and set aside.
Remove baking dish from the oven and stir until well combined.
Add baby spinach and stir again until spinach begins to wilt.
Now add your shredded spaghetti squash and toss until everything is incorporated.
Serve garnished with fresh cracked pepper, Sriracha and sliced green onions.
Good To Know: There are lots of ways to cook the actual spaghetti squash. This one’s my favorite because I hate trying to cut a raw spaghetti squash in half. To be honest, I always fear I’ll lose a digit when I do. But if that type of thing doesn’t scare you, cook your spaghetti squash the way you always do and then follow the rest of the instructions.
