Tteokbokki
The ultimate comfort food, Tteokbokki is spicy and delicious, and feels like a big old hug.
That is, if hugs left you with a good lot of upper lip sweat.
here’s what you’ll need
1 lb Korean rice cakes
1 cup mini sausages
1/2 mozzarella cheese, shredded
3 cups chicken stock
3 tbsp gochujang
1 tbsp red pepper flake
1 tbsp soy sauce
1 tbsp sugar
1/2 tbsp honey
2 cloves garlic, minced
green onions, thinly sliced
here’s what you’ll need to do
Over medium heat, bring chicken stock to a simmer in a deep-sided pan.
In a small bowl, combine gochujang, red pepper flake, soy sauce, sugar, garlic and honey.
Stir sauce into the simmering chicken stock until dissolved.
Add mini sausages and Korean rice cakes.
Stir well and let simmer for another 10 to 15 minutes until the sauce thickens, the sausages come to temp, and the rice cakes become soft and chewy.
Once thickened, sprinkle shredded mozzarella cheese on top.
Allow cheese to melt into the sauce for a creamy texture.
Garnish with green onions and enjoy!
Just be careful not to choke on that cheese pull, because DAAANG.
