Miso Salmon
Because everybody needs to have a hands off dinner recipe that takes only 15.
Oh, and worried that you live in a landlocked area and all the fish at your market looks tired? This gorgeous salmon is from Costco - where a slab of wild-caught is only $15 to $20 (and enough to feed a whole family).

here’s what you’ll need
salmon
2 tbsp miso
1/2 cup butter
chives, chopped
green onions, thinly sliced
here’s what you’ll need to do
Preheat oven to 400 degrees.
In a bowl, mix softened butter, miso and a handful of chopped chives.
Don’t have chives? Add some fresh cracked pepper.
Lay salmon a parchment-lined sheet tray.
Slather salmon with miso butter.
Bake for 15 minutes, or until fully cooked through.
Serve in slices next to a leafy green salad (or not), garnished with a handful of thinly sliced green onions.
Have a few extra minutes?
Add some roasted potatoes to the mix.
Simply quarter baby potatoes and place them on their own sheet tray.
Drizzle with extra virgin olive oil and generously sprinkle with salt, paprika and cayenne pepper (to taste).
Bake for 25 minutes, or until fork tender, flipping halfway through.
Pro Tip: Put the potatoes in the oven while you’re prepping your fish and it’ll all come together at the same time.
