Pumpkin Spice Waffles

Thankfully I checked the Kodiak Cakes website before sitting down to develop a Pumpkin Spice Waffle recipe, because they had (almost) exactly what I was looking for AND the recipe is packed with protein when you use their special whole-grain blend.
Oh, and this is totally not sponsored, I just happen to be super stoked about it.
here’s what you’ll need
2 egg whites
1/3 cup pumpkin puree
1 tsp vanilla
1 tsp pumpkin pie spice
1/2 cup water
extra virgin olive oil
butter
powdered sugar
maple syrup
here’s what you’ll need to do
Combine Power Cakes mix with egg whites, pumpkin puree, vanilla, pumpkin pie spice and 1/4 cup water in a bowl.
Whisk, adding another 1/4 cup of water until a smooth batter forms.
Preheat waffle iron.
Spoon about 1/4 cup of mix onto an olive oil-greased waffle iron and cook until golden.
This should take about a minute.
Good To Know: I used a MINI waffle maker, so you may need to add more mix to yours, depending on the size.
Stack ‘em up and serve dusted with powdered sugar, slathered in butter and drizzled with maple syrup.
